This 3.5 acre site demands single-vineyard status. Carefully tended Cabernet Sauvignon vines cling to this Oakville knoll-top. The knoll is divided between a north-west and south-east facing slopes. Both slopes are very rocky, free draining soils, ensuring full ripeness under stressful growing conditions. This wine is the story of two knoll-top slopes. Family Home Vineyard’s south-east facing slope was harvested on September 30. This bright element was fermented first and provided a component highly varietal in flavor, crisp and bright. The north-west facing slope was picked on October 8. This produced a component rich in texture and full of dark fruit flavors. All grapes were picked early in the morning and delivered cold to the winery to preserve as much flavor as possible. We fermented using yeasts selected to optimize fruit character and texture. Pump-overs were done 2-3 times per day in response to tannin and flavor development. Aerative Bordeaux splash-technique was used to soften tannins and set color. Skin contact was fourteen days for the first pick. The second pick was given an extended maceration remaining on its skins for forty-five days. This extended period of skin contact produced a wine with great texture, lots of chocolaty tannins and dark fruit flavors. Finally blending the varietally bright first pick with the texturally rich and dark fruit flavored second pick resulted in a more complex and full wine than either of the elements individually.2005 Family Home Cabernet Sauvignon Tasting Notes |
